Pleurotus Ostreatus "Pearl." With a slightly nutty taste and a silk-like texture, this mushroom’s umami notes are more subtle than most. The stem is almost as delicate as the cap and just as delicious, making this an ideal mushroom to serve whole in a stir-fry or with any more understated recipe. Pearl Oyster mushrooms have a tendency to disintegrate when overcooked, so they are best prepared with a short cook-time in a simple recipe.
