Its intensely earthly, umami flavor in combination with its chewy texture makes it the ideal meat substitute or companion. Whether you marinate this mushroom for a full day or slow-cook it in a stew, it will still keep its shape. For delicious results, slice thin and cook with an ample amount of olive oil or butter.
