Cross between Pleurotus Ostreatus and Hypsizygus ulmarius. The King Blue is known for its huge cap and thick stem. Its flavor tends toward the mild and earthy, with subtle umami notes. Despite their size, the caps are firm and the stems are only moderately chewy, making the King Blue a fantastic mushroom to deep-fry whole, cook as a meat substitute, or serve alongside steak.
