Pholiota Adiposa. While it may share its "chestnut" nickname with your everyday Baby 'Bella, this delicate little mushroom is anything but dull. Distinct for its orange-brown hue, long stem, and small, glistening cap, the chestnut mushroom is a common ingredient in many Asian recipes and is also great for pickling. It has a nutty flavor, and its chewy texture keeps a crisp crunch even when cooked. Chestnut mushrooms make a great centerpiece for vegan dishes, are an excellent addition to soups, and can act as a worthy substitute in recipes calling for hen-of-the-woods. The stems are tender and can be eaten just like the caps.
